Easy Salsa
This recipe is so easy and so tasty. Just boil 2 or 3 jalapenos until the color starts to fade a bit. Throw them in a blender, stems removed, with a clove or garlic, tomatoes, and some salt. Puree until smooth. Be sure and taste test. I usually start with 2 jalapenos and 1 tomato. Then I add more japs if it's not hot enough or more tomatoes if it's too spicy. This recipe is also really good with an avocado blended up in it as well. Enjoy!!

Menu Plan Monday

I have so much stuff in my house that my fridge and freezer are almost overflowing. I bought 20 Kraft coupons off Ebay. I bought the dressing, gave some q's away, and still have more than we can eat before it expires. You can bet I'll be giving a lot of it away. Here's what I have come up with for dinner this week.
Grilled BBQ Chicken, grilled asparagus, salad
Shrimp Linguine with Easy Creamy Alfredo Sauce, salad, garlic toast
Juevos con Chorizo y papas, frijoles, tortillas
Fried Rice with Chicken
Roast, potatoes, carrots, mushrooms, rolls
BBQ roast sandwiches, chips, veggies with ranch
leftovers or eating out (just as long as it's easy on mom!)

Exercising with God
I have a hard time getting motivated to exercise. I also have a hard time reading the Bible in the morning. Don't get me wrong, I love God and I love His Word but it's just in those wee dark hours when I'm all alone and the house is quiet that I find it hard to concentrate (stay awake). So I came up with a new method to combine exercise and bible reading. I always make sure to have my trusty pedometer on first. Then I head to the kitchen where the lights are bright, turn to whatever book I'm working on, and start stepping. I side step (step, touch, step, touch) while reading. I usually read several chapters from a few different books (1 OT, 1 Psalm, 1 Proverbs, 1 NT) so it takes me about 15-20 minutes. Depending on how fast I step I am getting an extra 500-1000 steps each day. I have only been doing this for about 2 weeks now but it has made an amazing difference in my day. I have so much more energy! I've gone from averaging 5000 steps each day to averaging around 10,000! I have not noticed any weight loss yet but I feel better, spiritually and physically, after doing this. Try it, I think you'll like it!

Linguine with Cheesy White Sauce
This recipe is very quick to make and very delicious too. It's easy on the budget too.
3 tbsp butter
1 clove garlic finely chopped
5 or 6 tbsp flour
milk
salt and pepper to taste
mozzarella
Parmesan
Melt the butter and saute the garlic until fragrant. Be careful not to burn it. Add the flour and whisk into the milk. Cook for a few minutes to get the raw flour taste out. Add the milk a little at a time until you get a thin gravy like consistency. At this point I add about a handful of grated mozzarella and a good 1/2 cup of parm. Just adjust it to your tastes. The parm is already pretty salty so be sure to taste test before you add anymore salt. Serve over your favorite pasta. Linguine is our favorite.
